Made using Vanilla Extract
(Organic Madagascar Bourbon cure vanilla beans in GF Vodka, aged 1 year, 1.5 fold)
and White Cane Sugar.
Gently heated to lock in the vanilla flavor
and release moisture to reduce clumping.
Can be used in anything you would use sugar in
to add that lovely vanilla flavor and smell
(it makes the best hot and iced tea).
Made heating White Cane Sugar for 7 hours, effectively changing the chemical makeup of White Cane Sugar into Granulated Caramel
by thermal decomposition.
Not only does Toasted Sugar taste less sweet,
it has less sucrose, fewer calories,
and a lower glycemic index than plain sugar. Vanilla Extract (Organic Madagascar Bourbon cure vanilla beans in GF Vodka, aged 1 year, 1.5 fold)
is then added and the now Toasted Sugar is gently heated again to lock in the vanilla flavor and smell, making the overall scent one of caramel, marshmallows, and vanilla.
Can be used in anything you use sugar in
as a 1:1 ratio but does not taste as sweet,
allowing a recipe to retain the structure sugar gives while backing off on the too-sweet taste that often accompanies recipes for
buttercream, mousse, or fudge.
Ground Vanilla Sugar
Made using Madagascar Bourbon Vanilla Beans that have been dried and ground,
then added to White Cane Sugar.
Left to sit for 8 months to absorb
the taste and smell of vanilla goodness.
Can be used in anything you would use sugar in
to add that lovely vanilla flavor and smell.
It's best in baked goods where the flakes of vanilla powder don't leave behind a strange mouth feel (think the way tea leaves or coffee grounds can affect the way a drink finishes).
Cinnamon Vanilla Sugar
Made using our very own Vanilla Sugar and adding a touch of Ceylon Cinnamon
from Sri Lanka that we receive as quillings and ground as fine as we can.
True Ceylon Cinnamon has a very unique flavor (similar to red-hot candies) and is significantly more powerful than you can typically find in stores.
Wonderful in tea, coffee, baked goods, or wherever you want a sweet cinnamon vanilla taste.
Made using Organic Panela
(which is unprocessed and unrefined
cane sugar, the real "sugar in the raw")
and Cinnamon Extract
(Organic Ceylon Cinnamon
in GF Spiced Rum, aged 2 months),
then gently heated, dried, and crushed
to make it a perfect finishing sugar
with a rich molasses and cinnamon taste.
Great for oatmeal, muffins, or anywhere you want an unusual touch of sweetness
(or lower glycemic index).

These Vanilla Pearls are a by-product of gently heating vanilla sugar in order to seal in the vanilla flavor (they are the clumps that form when the vanilla sugar begins to dry out but sticks together). Fantastic as a sugar topping for things like oatmeal, but also great to eat like candy when you just want a little vanilla sugar (perfect for kids who don't want to stay out of your loose vanilla sugar, not that we would know or anything).

Packed in molds, then gently heated to lock in the vanilla flavor and harden the sugar into shapes. Can be used in any drink you would use sugar in to add that lovely vanilla flavor and smell, such as hot tea, iced tea, or lemonade. Looks pretty too and makes an awesome gift.
